Bella’s Salmon and Pesto Pasta – Summertime Cooking

Friday 18th June ’14 in London saw one of the hottest days of the year so far, with temperatures soaring to 30ºC from midday onwards. This meant a particularly sticky and uncomfortable long train journey from central London to my home in Essex. The tube was as hot as I’ve ever experienced, it recently being reported that temperatures underground are exceeding the limit of what would be legal to transport livestock. If only the same limits applied to us humans!

On top of this my other train home was annoyingly slow so as to protect rail infrastructure during the extreme heat. It was past five on a Friday and I needed only two things when I arrived home… a cool shower and a quick but delicious meal.

This is a healthy, simple yet tasty meal that only requires four main ingredients.

First, I lay the salmon fillet on a sheet of aluminium foil under a baking tray. I drizzled some olive oil over the fillet and seasoned well with sea salt and cracked black pepper. Folding the foil into a parcel with one end left open, I put this into the oven to steam away at about 180 degrees (for fan oven) for 20-25 minutes.

Whilst this was cooking away in the oven, I boiled the spaghetti and wilted some spinach in a separate hot pan. When the salmon was done I opened (carefully!) the foil parcel and flaked the salmon.

I like to cook the spaghetti quite well so that the pesto sauce sticks to it nicely. I then simply mixed the spinach and salmon flakes in and enjoyed! This is a light, healthy and easy meal that is perfect for any hot summer’s day.
