On the morning of Saturday 19th July, having slept through my alarm, I scrambled out of bed to rush to the Imperial War Museum in Lambeth, south London, which was reopening to the public after months of refurbishment. Bella’s Salmon and Pesto Pasta – Summertime Cooking

Friday 18th June ’14 in London saw one of the hottest days of the year so far, with temperatures soaring to 30ºC from midday onwards. This meant a particularly sticky and uncomfortable long train journey from central London to my home in Essex. The tube was as hot as I’ve ever experienced, it recently being reported that temperatures underground are exceeding the limit of what would be legal to transport livestock. If only the same limits applied to us humans!

On top of this my other train home was annoyingly slow so as to protect rail infrastructure during the extreme heat. It was past five on a Friday and I needed only two things when I arrived home… a cool shower and a quick but delicious meal.

This is a healthy, simple yet tasty meal that only requires four main ingredients. Continue reading
